In Ustica, they are called spinci: soft, traditional fritters prepared in the island’s kitchens and closely tied to celebrations, shared tables and family memories.

This Fuitina Experience takes you into the kitchen of Rosetta and Rosalia, two women of the island who continue to preserve recipes, gestures and little secrets learned over the years.

Together, you’ll prepare the dough, learn how to recognise the right consistency and discover how to shape the spinci before frying them, following those gestures that are best passed down by watching and doing.

Along the way, there will be time for conversation, memories and stories about life in Ustica and the occasions when spinci were — and still are — served on the island’s tables.

And, of course, you’ll end by tasting everything together.

Because some traditions still carry the flavour of the hands that taught them to us.
